2 Compartment Sinks

2 compartment sinks are often used for food prepping. So if you wanted to thaw out some frozen food, you could do that in one of these sinks. Or if you want to prep vegetables and fruits by rinsing them off and sanitizing them in these sink, you could do that too. But these sinks are very often used to wash your dishes, and so we'll give you a little information about that.



You should understand the health-code regulations of wherever you are in Canada. Just because you wash dishes in your sink at home, doesn't mean that will suffice in a restaurant :) You have to make sure that your dishes are fully sanitized, so often a 2 compartment sink would be used in tandem with a commercial dishwasher. First you could rinse off dishes in one sink. Wash them in the next sink, and then move them off into your dishwasher for a short sanitizing cycle. That way, the health inspector isn't going to be breathing down your neck and you can confidently display that green "PASSED" sign out front of your restaurant!

These commercial sinks are most often NSF approved, so you know that they are going to be getting a pass from the health inspector. You may also want to consider the stainless steel that's being used. What gauge is the steel? Is it 304 or 430 stainless steel? All that stuff is sort of technical, and you probably won't need to know it. But if you're going to be beating the crap out of your sink, it's probably a good idea to get a heavy duty stainless steel.

14-gauge would be the thickest and toughest. 18 gauge would be an economy choice, but it should suffice for most commercial kitchens. 304 stainless steel is a bit more expensive, whereas 430 is a bit cheaper. 304 is more expensive because it has more chromium which makes it more corrosion-resistant, and so it would be easier to keep nice and shiny.

But regardless of which sink you choose, you should be able to rest easy. We stand behind any of these sinks and they should be able to last for many many years of constant use in a commercial kitchen.

You'll also want to think about the compartment size. You'll be able to choose the different sizes on the product page. Some sinks would work with big pots and pans, while others would be better suited for small plates and dishes, or prepping vegetables.
