Sous vide water baths will take up kitchen space, however, they're insulated machines. As a result, you don't have to keep an eye on the water level that would normally fluctuate due to evaporation.
With sous vide thermal immersion circulators, you can still get the same, delicious results as you would with a water bath. However, since they're meant to attach to a pot or saucepan, you have to keep an eye on the water level. If their pump is circulating out of the water it could cause pump damage. Now, if you find yourself wanting a sous vide thermal immersion circulator to save space, but don't want to worry about monitoring the water level, then something like the Sirman Soft Cooker might be what you're looking for as it has an automatic shut-off when out of water.
Another thing to note about thermal immersion circulators is that some are only compatible with insulated or polycarbonate containers. But don't worry, as we've gone ahead and labelled the thermal immersion circulators that have that limited compatibility.
