Deck Ovens – 4-decks

A deck oven is probably the most traditional way to make a pizza. So many purists will always opt for a deck oven, and honestly, we can’t blame them! These are designed to perfectly cook crusts and toppings. These ovens are also great for a variety of other products: they can broil, roast, bake, so you’ll find them in a variety of commercial kitchens, both for pizza and other items. These are old-school ovens: people have been cooking like this for millennia! (Seriously, check it out on wikipedia!) So many Canadian bakers love to cook cookies or bread with these ovens. And many Italian eateries will have a deck oven for pizza and pasta and everything else an Italian eatery may need an oven for.

Deck ovens usually have a top and bottom burner, so that you can perfectly cook both the crust underneath and the toppings on top. Many deck ovens will also have a fan to circulate the air to avoid hot and cold spots. And some models will have what is called a perforated deck, so that the heat can move throughout the cavity much easier to allow for more even cooking. If you really want precise controls, opt for an oven that has independently controlled burners, so that you can control the top element and bottom element separately. This is a great feature to have to avoid overcooking the top and undercooking the bottom, or vice versa.

Make sure you consider where the pilot light and the controls are: some restaurants will build these ovens into their walls for a more attractive and space-saving design, so you’ll want to know these details before you purchase your deck oven.
