Guess what gelato means in English? It means ice cream! But gelato has less fat and more milk than ice cream. So that means one very big difference between gelato and ice cream is that gelato is served at a much warmer temperature and it’s served in special pans, so a gelato display case will be very different from an ice cream dipping cabinet. These gelato display cases are commercial machines, so they have high quality insulation and powerful compressors, which allow you to serve your gelato at its ideal temperature. Gelato cabinets usually have bottom mounted compressors, which is great for hot locations, as the compressor will be working lower to cool ground (remember, heat rises).
