Sushi Cases

Refrigerated sushi display cases can be found in most sushi restaurants across Canada. These low, long display cases are perferct for keeping your sushi at safe temperatures and displaying them in bright, stylish cases for your clients to see.



These sushi cases have direct cooling systems, which means instead of forced air blowing around the case, the plates at the bottom will be cooled. For a small, bite-sized food like sushi this is important, as a larger glass merchandiser wouldn't be nearly as efficient at cooling the products. With these cases, your sushi is the thing being cooled directly.

The major decision you're going to have to make when buying a sushi case is how big you want it. This will often just be dictated on the size of your countertop, but if you're building a custom location then you'll probably have to put a bit more time into thinking about how much product you'll be wanting to put into the display. One thing to remember is that the width of the case (sometimes called length) is not the total refrigerated space. The compressor will take up some of that width. So if you have a 44" wide display case, you may only have 30" wide of refrigerated space to put your sushi.

You'll also want to consider where the compressor is going to go. It's best if it's not up against a wall, near a door to the outdoors, or right next to a cash. Like all refrigeration systems, sushi cases need to "breath" so having a clean, open space for your compressor is going to help increase the lifespan of the showcase and avoid the air exhaust from blowing on your customers or employees. equipment near the case, make sure the compressor is mounted away from that area.
