The Doyon ER136 retarder proofer offers the perfect environment to keep refrigerated doughs until they are ready to be proofed. You can order this proofer in two different models: the ER136 will accommodate one single rack up to 68.5" high, and the ER136TLO will accommodate one single rack up to 73" high.

Control of temperature and humidity is the key to producing flavourful results. This proofer will stay refrigerated and then switch automatically to proofing mode, saving labour and time before you bake. It operates at a minimum temperature of 36 degrees Fahrenheit (2 Celsius) for retarding and automatically switches to proofing -- which will then operate anywhere from room temperature to 110 degrees Fahrenheit (43 Celsius).

      • Refrigeration mode: minimum temperature of 36 degree Fahrenheit; integrated automatic gravitational cooling system
      • Proofing mode: maximum temperature of 110 degree Fahrenheit with relative humidity up to 95%; separate heat and humidity controls
      • Automatic water fill system (no water pans to fill)

      • Glass doors and brightly lit interior to view proofing without opening the door
