You can order this unit with manual controls, or with a touch screen and programmable controls (model QBT-5/10). The oven can hold five 18" x 26" sheet pans, and the proofer can hold ten 18" x 26" sheet pans. Or if you're using 13" x 18" sheet pans, the oven can hold 10 and the proofer can hold 20.
