The Doyon SM200 is a general purpose planetary mixer suited for a variety of products. Its quiet design and compact size allows it to fit into almost any area of your business. It is a versatile mixer that can handle a variety of products from cakes to cookies, to meatloaf, mashed potatoes or classic yeast breads.
It has a 20 quart capacity which can cold about 10 pounds of dough at a 50% absorption ratio. It is a 120 volt machine at 12 amps, so it can work with a standard 5-15 plug. Doyon is known throughout the bakery industry for their high-attention to detail and uncompromising standards.
To determine the absorption ratio (AR) of dough, divide the weight of the water by the weight of the flour. For an example: let's calculate the absorption ratio of a mixture containing 10 pounds of flour and 5 pounds of water: 5 / 10 = 0.50. That means it has a 50% absorption ratio.
